De Cayenne seedling
De Cayenne is probably the most famous cultivar of Capsicum annuum. It is a moderately hot pepper, with fruits growing to a size of 10-25 cm. The fruits are slender with usually a curved tip. Its mildly smoky and slightly bitter flavor is excellent for sauces or sausages.
The origin and name of this chili variety lie in the city of Cayenne in South American Guyana. In 1498, Christopher Columbus discovered the coast of Guyana. The city of Cayenne was later founded by French settlers. It is likely that this spice was exported from the port city of Cayenne to Europe, which is why it bears its name.
Due to its shape and origin, De Cayenne is also called cow's horn, Guinea chili, or "Spanish pepper." Thanks to its thin walls, this chili is ideal for drying.
